Hi! Glad you're here because I want to share this delicious recipe for banana bread.  Something about it makes me happy every time I bake, eat, or give away a loaf. With the weather turning cooler--shout out to those who experienced a really really early snow fall this weekend--cooks turn on their ovens.

Banana bread is comforting when baking in the oven. The delicious smell drifts through the house magnifying the anticipation of taking that first bite of a warm buttered slice. Creating something special for those I love is probably why the "joy of cooking" is such a familiar phrase. Okay, I'll come down from my writerly perch and say why banana bread really makes me happy--cause, dang it, banana bread tastes so good! YUM!

My daughter, Sara, gave me this easy banana bread recipe. Grab it and make you and everyone you love very happy!

QUICK BANANA BREAD
1 c. sugar
2 c. flour
1/2 tsp. salt
3 ripe bananas, mashed (you can get away with just 2 for less banana flavor)
2 eggs
1/2 c. vegetable oil
1 scant tsp baking soda

Blend all ingredients BY HAND in the order listed and pour into a greased 8 x 4-inch loaf pan.
Bake at 325 degrees until done in the center, about one hour.
Tips: Add walnuts to the batter and sprinkle a few on top before baking.
Fill pan 1/2 full to avoid overflow. A double batch makes 6 small aluminum tins. Bake 30 to 32 minutes.

Enjoy!

  • You can prevent bananas from gettng too ripe by placing them in the refrigerator. Oh yes, the skins will get black, but the banana stays good.
  • Very ripe bananas make the banana bread sweeter and easier to smash up for making bread.

Thanks for the recipe for banana bread, JQ. I love it, but I've never had a go at baking my own. I like the addition of the walnuts!

Hey, JQ. Love this recipe. Will have to try it. I always put bananas in the icebox. Hate gushy ones. :) I'll share.

Helena, definitely add walnuts. Not only tasty, but good for you too!

Marsha, I hope you do try the recipe. I like the hand mixing. I've heard, and I think I have experienced, beating the batter too much causes peaks when it bakes instead of a nice top.
