Julia Child always said the alcohol cooks off, and I tend to agree. My brother, who has a problem with alcohol, asks me not to put any in the food when he comes for dinner, and I am happy to oblige. If there's an issue, I'd skip it. Otherwise, it tenderizes and adds flavor, and some dishes, IMHO, can't do without it.
