Apple Harvest Time in Michigan, Apple Salad Recipe

It's apple time in Michigan!
And what an apple harvest it is! A record 31 million bushels of apples is expected this year. An increase of 7 million bushels from the 2015 harvest.

If you haven't bitten into a fresh, crunchy apple, you're missing out. Apples are so versatile too--desserts, salads, sauces, jelly, but especially delicious as a snack or in your lunchbox.

At our family dinner on Sunday, I made a favorite apple dish--Autumn Waldorf Salad. The dressing keeps the apples, grapes, celery and nuts fresh and tasty for several days. My friend Elaine shared this recipe with me. I'm happy to pass it on to you. Serve it in a clear glass bowl to make a festive table at your next holiday (or family) dinner.

Autumn Waldorf Salad

Dressing

1 1/2 c. sugar
1/2 c. flour
1 1/2 c. water
Boil till thick.
Add:
1 tsp. margarine
1 tsp. vanilla
Stir well, then allow the dressing to come to room temperature.

Fruit

6 c. cubed apples
2 c. grapes
1 c. celery
1 c. walnut halves

Pour dressing over fruit, refrigerate. Enjoy!

Hello Helena. Thank you for your delicious recipe. I looked it up and it is similar to what I call apple crisp. But I think crisp has oats in it as part of the topping. There's no crust to gain extra calories--not that it means much since we like to add ice cream or whipped topping to the crisp.!! The recipe suggested adding custard. Is that like ice cream here?

I love Waldorf salad. I make a simpler version, which should mean that I would make it often, but I forget how easy and delicious it is. Thanks for the reminder. I also made quite possibly my best apple pie ever for Ray's birthday earlier this month. My pie-baking skills had been slipping in recent years, but I think I got back on track with this one. Must have been those Michigan apples!

Hey, JQ. I didn't know how many different kinds of apples existed until a visit to Vermont one fall. Wow! I'd never heard all those names. My mother made Waldof salad. Really yummy. Don't think I have her recipe, so glad for this one. I've shared. :)

Great post and video J.Q. A few years back I went to an apple orchard with one of my friends and I was amazed at the varieties of apples. We were able to sample as many apples as we liked.

Hi Nan, you're welcome for the reminder to make apple salad. I make one to using just mayo for the dressing. Quick and easy. If you'd like to practice making more apple pies, I'd be happy to be a guinea pig!!Thanks for stopping in.

Marsha, thanks for sharing! Every year there seems to be a new apple to try. Always experimenting for better flavor, keeping, and texture. I think I read Michigan grows 18 varieties. Apple orchards are such a peaceful place to visit. Well until you go to the farm markets/orchards and people are picking their own. Fall is a busy time for them.
